Look what I found in the depths of the forum software's options: a setting to put the most recent subtopics at the top of the list instead of the bottom. And I've also checked the option to move subtopics up when they have new posts.
Lots of people have written to me to request this, so I hope it will suit everyone once we get used to it. If not, at least now I know where to find the option, so I can always change things back.
