In reading about moon signs, my current obsession, I found Mrs. Knapp's advice:

Don't try to make either [sauerkraut or pickles] when the signs are in any part of the stomach or feet, she advises, or "it'll stink you out of the house. http://www.wvculture.org/goldenseal/Spring97/signs.html

In moderation, sauerkraut is truly a health food.

'Raw' means unpasteurized, that is, uncanned, so you won't get the real, biologically active kind at the typical grocery store. Perhaps some at Clarity make sauerkraut or know where to get the real stuff. My father once attempted to make sauerkraut, but it never showed up on the table. Generally, cabbage here matures in early summer when it is too hot to make sauerkraut without refrigeration, so I have never tasted sauerkraut and will not now because of its high level of salt and vitamin K, which conflicts with my bloodthinning medication. Anyway, if you make or use uncanned sauerkraut, I'd like to hear about it.
